Jamaican Jerk Sauce and Marinade

This is a semi-traditional Jamaican jerk sauce for meat, poultry, and seafood. It contains cinnamon, nutmeg, ginger (all aphrodisiacs, so be careful!) and of course magic. We love this jerk sauce and you will too! Cool Runnings!


¼ cup canola or peanut oil
2 tbsp. fresh thyme
1 bunch scallions, chopped
1-inch-thick piece fresh ginger, chopped
4-6 garlic cloves, peeled
1 habanero pepper
6 allspice berries, crushed
1 tbsp. black peppercorns
1 tbsp. nutmeg, ground
2 cinnamon sticks, broken
2 tbsp. soy sauce
2 tbsp. ketchup
¼ cup brown sugar
Lime juice from 2 limes

1 tbsp Mago Green Sauce, or 2 tbsp Mago Red Sauce



Puree the ingredients listed above in a food processor or blender until smooth. Use as a dip, spread, or marinade.
